Early Season Fishing Picnic
To kick off the fishing season we had a stream side picnic featuring fresh caught brook trout and Niçoise salad. Step one...catch some fish.

Step two: Set the picnic, start a fire, and prepare the fish.
Streamside Steamed Trout
Supplies
2 fresh caught, gutted trout
Aluminum foil (sheets long enough to fully enclose trout...lengths may vary)
1 Bunch of dill
2 lemons
Salt
Pepper
White wine or rose you plan to eat with the trout (we like Gewürztraminer, Rosé, or Montrachet)
Method
Place gutted trout on individual aluminum foil sheets.
Salt and pepper the cavity of each trout.
Stuff with as much dill and lemon slices (half moons work best) as you can.
Fold the packets - lengthwise then head and tail leaving a small opening in the middle.
Pour in a ¼ cup of wine.
Seal packets.
Place next to a fire or on a grill for 10-15 minutes or until the eyes of the fish are white.
The meat should separate easily from the bones.
Serve with niçoise or other salad.
